Pineapple Chicken Stir-Fry

 

Ingredients

  • 2 tsp sesame oil
  • 1 red bell pepper, cut into strips
  • 8 large leaves napa cabbage
  • 6 oz snow peas, trimmed
  • 1/2 cored peeled pineapple (about 10 oz), diced
  • 1-2lbs cooked chicken breast
  • Leftover sesame sauce (from Orange Sesame Chicken Bowl)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced unsalted almonds, toasted
  • 2 green onions, sliced

Sesame Sauce

  • 1/4 cup raw honey
  • 1/4 cup reduced-sodium soy sauce
  • 1 1/2 tbsp orange zest + 1 cup fresh orange juice
  • 2 tbsp sesame oil
  • 1 tbsp tapioca starch, mixed with 1/2 cup water
  • 2 cloves garlic, minced
  • 2 tsp peeled and grated ginger
  • 2 tbsp sesame seeds

Preparation

  1. Prepare sauce: To a medium saucepan, add all sauce ingredients. Bring to a simmer for 5 minutes, remove from heat and stir in seeds.
  2. In a large skillet on medium-high, heat oil. Add bell pepper, cabbage and snow peas and cook for 5 minutes, until vegetables are crisp-tender.
  3. Add pineapple, chicken and sesame sauce and cook for 2 minutes, until heated through. Sprinkle with cilantro, almonds and onions.
